Felucian Garden Spread, also known as Felucian Kefta & Hummus Garden Spread, was a vegetarian dish created by the Artiodac chef Strono Tuggs. Inspired by his experiences learning about Felucian farming at a farm on the planet Felucia, it consisted of herb hummus spread and vegetable relish served with flatbread or ronto wrappers and plant-based meatballs or Parwan Nutricakes.

In 34 ABY, Tuggs served the spread at his mobile restaurant Tuggs' Grub when it was stationed at Docking Bay 7 Food and Cargo in Black Spire Outpost on the Outer Rim planet Batuu. He also published the recipe for another version in his cookbook The Official Black Spire Outpost Cookbook.

Felucian Garden Spread was a vegetarian dish with two variations, one being a cookbook recipe[1] and the other prepared at a restaurant. At its base was a relish salad made with red and green vegetables and a puréed herby hummus spread. The restaurant version topped it with pieces of flatbread and three vegetarian "meatballs" made by shaping plant matter into balls.[2] The recipe could use ronto wrappers as the flatbread and protein-packed patties called Parwan Nutricakes in place of the plant-based meatballs. The spread was suitable for Felucians, Artiodacs,[1] and humans to consume.[2]

The Official Black Spire Outpost Cookbook depicts the dish prepared according to Strono Tuggs' recipe.

Before the Artiodac chef Strono Tuggs worked for Maz Kanata,[1] who ran a tavern within her castle on the planet Takodana,[3] Tuggs spent time at a farm on the jungle planet Felucia. He learned the Felucian farming and harvesting methods as well as the importance of using fresh and local ingredients in all of his food. Inspired by the Felucian people and their teachings, he created the Felucian Garden Spread dish and named it after them.[1]

In 34 ABY,[4] after Kanata's castle was destroyed, Tuggs served the dish at his mobile restaurant, Tuggs' Grub, when it was stationed at Docking Bay 7 Food and Cargo in Black Spire Outpost on the Outer Rim planet Batuu.[2] In that year,[5] he also published his recipes for the dish and its components in his cookbook The Official Black Spire Outpost Cookbook.[1] The author and explorer Eloc Throno mentioned the spread by the name Felucian Kefta & Hummus Garden Spread in his guide book Traveler's Guide to Batuu, noting that it was flavorful despite lacking meat.[6] Around the same time, Tuggs included his cookbook's Felucian Garden Spread recipe in a small pamphlet of recipes meant to help a Batuu visitor learn more about the planet.[7]

Felucian Garden Spread is found in the real world quick-service restaurant Docking Bay 7 Food and Cargo at the themed land Star Wars: Galaxy's Edge, which opened at Disneyland Park on May 31 and Disney's Hollywood Studios on August 29, 2019.[8] It was officially announced to the public on February 27 of that year via articles on StarWars.com[9] and D23: The Official Disney Fan Club.[10]

The dish was inspired by the plant-covered planet Felucia,[9] which was described by Brian Piasecki, culinary director for concept development at Walt Disney World Resort, as a "completely green planet" suitable to vegetarian or plant-based diets. According to Piasecki, the kefta plant-based meatballs are made with an Impossible Foods vegan product that has a meat-like taste.[11]

Felucian Garden Spread was initially only served during lunch hours,[8] but it has since become available at both lunch and dinner and has been renamed to "Felucian Kefta & Hummus Garden Spread." The menu's description reads, "Impossible™ Meatballs, Herb Hummus, Tomato-Cucumber Relish, Pita."[12]

The reference book Star Wars: Galaxy's Edge: Traveler's Guide to Batuu, written by Cole Horton[6] and published on July 21, 2020,[13] mentioned Felucian Kefta & Hummus Garden Spread as a vegetarian meal at Docking Bay 7 Food and Cargo.[6] Since this matches the renaming of the dish in the theme park locations,[12] it appears to be another name for the in-universe dish.[6]

A recipe for the dish was included in the 2019 recipe book Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook, written by Marc Sumerak and Chelsea Monroe-Cassel. It incorporates Ronto Wrappers and Parwan Nutricakes, which also have recipes included in the book, but they can be substituted with pita bread and falafel, respectively. The ingredients for the hummus are black beans, tahini, minced garlic, olive oil, chopped parsley, lemon juice, oregano, cumin, salt, pepper, and cilantro. The salad is made with diced tomato and cucumber, chopped fresh mint, olive oil, salt, and pepper.[1]

The 2020 non-canon video game expansion The Sims 4 Star Wars: Journey to Batuu includes Felucian Garden Spreads as a meal sold to the player's Sims for eight credits per serving at the Docking Bay 7 Food and Cargo vendor in the Black Spire Outpost neighborhood. Upon eating the meal for the first time, the Sim automatically learns the recipe and can prepare it with stoves in their home neighborhood.[14]
