Pitmaster's Choice was one of the two varieties of jerky served at the Ronto Roasters eatery in Black Spire Outpost on the planet Batuu. It was made from a variety of thin cuts of meat by the smelter droid 8D-J8, who dried out the strips using the establishment's converted podracer engine roasting pit before the owner, Bakkar, flavored them.

In 34 ABY, the Artiodac chef Strono Tuggs included a recipe for the dish in his book The Official Black Spire Outpost Cookbook, and explorer Eloc Throno also mentioned it in the book Traveler's Guide to Batuu.

Pitmaster's Choice was a variety of jerky made by the former smelter droid 8D-J8, who worked as the pitmaster in the Ronto Roasters eatery in Black Spire Outpost on the planet Batuu. When not roasting ronto shanks over the establishment's converted podracer engine roasting pit, the droid cooked the thin strips of meat hanging around the pit,[2] which the engine tended to dry out.[2] This meant Pitmaster's Choice could be made from a variety of meats, including nuna turkey or luggabeast meat cooked until they were brown and black.[1] Bakkar, the owner of Ronto Roasters, then flavored the thin cuts to make the two varieties of jerky;[2] either Pitmaster's Choice[1] or Nuna Turkey Jerky.[3]

In 34 ABY,[4] the Artiodac chef Strono Tuggs included a recipe for Pitmaster's Choice, which he considered sublime, in his cookbook The Official Black Spire Outpost Cookbook. In the book, he lamented that most people did not have their own converted podracer engine to authentically cook the dish on, but he claimed his recipe would keep them satisfied between trips to Ronto Roasters.[1] That same year,[5] explorer Eloc Throno mentioned the two varieties of jerky that 8D-J8 made in an entry on Ronto Roasters in the book Traveler's Guide to Batuu.[2]

Behind the scenes[]

Pitmaster's Choice was created as one of the recipes included in the 2019 cookbook Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook, which was written by Marc Sumerak and Chelsea Monroe-Cassel. The out-of-universe recipe for the dish requires ground pork with a marinade of dark soy sauce, sesame oil, sugar, a pinch of salt, and a pinch of five-spice powder.[1]
