The Amish are a Christian denomination who believe in living a simple life apart from the influence of the world. Some sects embrace technology more than others.
In an early draft of TOS: "This Side of Paradise", Elias Sandoval's clothing is compared to that of the Amish. [1] [2]
The Amish have also been mentioned in Star Trek fiction. In the Strange New Worlds 9 story "Mestral", Zefram Cochrane, upon meeting Mestral, questions whether the Vulcan is Amish, before admitting he didn't know a lot about them.
In the Pocket TOS novel Best Destiny, George and Winona Kirk's farm in Iowa hired Amish workers who lived on their own farms nearby.
In the Pocket TNG novelization Descent, the USS Enterprise-D's holodeck had an Amish holoprogram.
