Preparation

  1. Step 1

    In a cocktail shaker, combine the Aperol, bourbon, honey, lemon juice and sugar. Shake well.

  2. Step 2

    Fill a rocks glass with ice, and pour in contents of the shaker. Top with club soda, and garnish with orange slice.

Found this when looking for recipes to help use a gift bottle of Aperol. I'm a bourbon drinker, so it seemed a good bet. It had the sweetness of an old-fashioned but the Aperol added a nice bitter counterfoil. The club soda made it refreshing. I'll keep it in mind for the spring and summer, when I'm less likely to want simply to sip my bourbon neat.

I like to make this drink with a bit more lemon juice - maybe 2 tsp. - and less sweetness. I omit the sugar and only add honey. I garnish with a slice of clementine when possible. Very pretty and refreshing.

I always have these ingredients on hand-- it was easy, delicious, and refreshing. Definitely keeping this one in the rotation.

Took the advice to do rosemary honey simple syrup. Forgot the club soda, whoops. It was delicious.

I do only honey, no sugar is needed since bourbon and aperol are sweet already. I think you can get by with a little less club soda. A sprig of thyme adds a nice hint of complexity!

I enjoyed it more concentrated with just 1 oz club soda and served it straight up.

Had half a bottle of Prosecco on hand and no club soda so skipped the sugar (only used the honey) and topped with Prosecco. Delicious!

I used rosemary simple syrup in place of honey and sugar and some tonic in place of club soda. Delightful for afternoon or evening.

This is a delicious cocktail! I modified by using a honey simple syrup which incorporates into the drink better than straight honey. I increased the honey slightly and skipped the sugar to get more of the honey flavor. Definitely a favorite summer drink.

I, too, had honey simple syrup on hand, and it substituted beautifully for the honey and sugar.

This is an excellent and refreshing cocktail. Of course the honey sticks to the glass, so I subbed a honey simple syrup for the honey, doubled so as to add similar sweetness. It's delicious garnished with a quality maraschino cherry.

Followed the recipe completely. Very refreshing. Better than Aperol Spritz.

I only had Amaro Ramazzotti, which worked well

I have made this several times, but the honey seems to stay at the bottom of the shaker. It tastes delicious but I am not getting any of the honey in my glass. Any suggestions?

Definitely skip the sugar, the honey provides enough sweetness. Otherwise, fantastic cocktail. Like an Aperol Spritz with some more kick.
