Her first panel: "Future-Proofing Ingredient Supply Chains Against Climate Change" covered the effects of climate change on ingredient availability and sourcing. The message is: diversify sourcing by having redundancy and identifying new growing regions to ensure that you can continue to maintain supply. We shouted out to Conagra for their use of a dairy exchange where they use a percentage of milk components and other companies uses the remainder so that nothing goes to waste. Jaime also talked about our work on Atomo Beanless Coffee and Kazoo Tortilla Chips, made from upcycled corn. Core to success at large companies is to make sure you have good cross-functional alignment as you work through the development process. For example, one of our clients has the procurement team working with the development team from the beginning, so they can ensure that there is proper availability of key ingredients. We quickly had to pivot on their project because of lack of supply, which was good to learn early so we could adapt before we got too far down the development path and everyone fell in love with the original product! Silicon Valley-based food & beverage innovation firm Mattson: Innovation for the Food & Beverage Industry has announced a chief AI officer and unveiled a suite of AI-enhanced services it claims can both enhance and dramatically speed up the product development process. While anyone with a ChatGPT account can generate a concept and packaging design for a new high-protein snack or caffeine-laden energy drink, Mattson has developed customized AI services via its ProtoThink cloud-based innovation platform and Food Studio Ideation service, which are tailored towards food industry professionals, says chairman and new chief AI officer Steve Gundrum. “A lot of our clients come to us and say they’ve tried using off the shelf AI and in many cases, don’t feel it’s very powerful or helpful,” says Gundrum, who has led the development of new tech-and-trend-driven innovation services at Mattson for over three decades, working with everyone from high-profile foodtech startups to multinationals. “And then they see what we’re able to do with our customized models and it completely changes their perspective." #AI #artificialintelligence #foodtech #foodinnovation
