Add the lime wedges, one of the lemon peels, sugar and salt to the bottom of a cocktail shaker. Use a muddler (or the end of a wooden spoon) to lightly smash and release the lime’s juices and the lemon’s oils and to dissolve the sugar and salt.
Add the vermouth and crème de cassis, and fill the shaker with ice. Cover and shake until very cold, then strain into a Collins glass filled with ice. Top with sparkling wine and garnish with the second lemon peel.
Alternative to crème de cassis to achieve similar sweetness profile? eager to try cocktails using vermouth but already have such a full bar!

Just made one w/Chambord. It was delicious!
If you don't have sparkling wine, use wine and spritz it up.. !
Try with Cherry Heering, Ginja or other cherry liqueurs.

Any fruity liqueur will do nicely here, though not all will give you the beautiful color. I'm a huge fan of Pama (pomegranate) here, which has quite a bit more acid than crème de cassis and gives the whole thing more zip, plus a nice pink base.
