I marinate with olive oil lime juice garlic cilantro and soy. The oil gives it a nice char while the rest give the meat and great flavor for the tortilla
Be careful when using fresh pineapple with meat. It can turn meat to mush very quickly, a lesson learned the hard way when I added diced fresh pineapple to a pork quesadilla!
Cube the steak when done, so much easier to eat in tacos. Make sure to salt sufficiently, add lime juice to salsa. We used flank steak, needed more like 4 min/side
Use cotija cheese. Or pork and marinate differently
Served over thin strips of fried tofu with onions and spinach. Added a dash or two of cayenne and ancho chili powder and lime juice to the salsa
Grill pineapple slices before or along with the steak. Then chop and add to the taco with cotija cheese, lime juice, jalapenos and cilantro. A little Tajin on the grilled pineapple make it even better. Or make the salsa with grilled pineapple.
Tried it with entrecôte - very good!. Second time with pork - even better. I think pork and pineapple go together very well.
Marinated 1lb of skirt steak with soy sauce, canola oil, minced garlic, cumin, and chili powder for a few hours. Grilled and diced up. Pineapple salsa was delicious and simple - just some fresh pineapple cubed with cilantro. Served meal with other taco fixings. Make this!
Held the jalapeño and both my children under age 5 loved this. Grilled corn and worked perfect as a side. Highly recommended.

No marinade, just salt, pepper and butter, and the broiled steak was just...meh. Also the pineapple I bought was less than spectacular. I think this no-recipe recipe has a lot of potential to be fantastic but would be better executed during the summer months.
