I just love leveling up my desserts to make them healthy, gluten free and sugar free. In the recent past, I took up this new favourite obsession . These Chocolate Chip Blondies are my new favourite all time desserts.

Ingredients needed to make Healthy Blondies Recipe
- 2 cups Oats Flour - You can replace with Almond Flour or Coconut Flour as well.
- ½ cup Butter melted - I use unsalted light butter. You can use Coconut Oil as well.
- 1 cup Coconut Sugar - You can replace with Stevia or Golden Monk Fruit Sweetener as well.
- 1 tsp vanilla seeds - Use these or use a very good brand or quality of Pure Vanilla Extract.
- ½ tsp Baking Powder- for baking
- 2 Eggs - to make the Blondies soft and moist
- 1 cup Walnuts chopped - You can use chopped Pecan Nuts as well
- ½ cup Chocolate Chips - You can use White Chocolate Chips as well
How to make Healthy Blondies?
- Preheat the oven to 350F or 180C. Line a baking dish with parchment paper.
- Combine Oats flour with melted butter, coconut sugar, vanilla seeds, eggs and chopped walnuts.
- Transfer to a lined baking dish. Top with chocolate chips.
- Bake for 30 min.
- Cut into squares and serve.
Tips to make the best Low Carb Blondies
- These Keto Blondies gets dry very quickly and that's because most of the times they get overbaked. So its important to remove Blondies right from the oven when they are just done!
- Make sure you do not over mix the blondie batter as that is a very common reason why most blondies turn out very dry and do not get a crinkly top as you desire.
- Besides Chocolate Chips you can add any nuts like Walnuts or Pecan nuts into these Low Carb Blondies.
- You can make Eggless Blondies, just replace Eggs here with flaxmeal or chiaeggs.
How to store these Keto Blondies?
Refrigerate: You can store leftover Blondies in an airtight container in the refrigerator for upto a week. If you keep them at room temperature then you can store them on the counter for 2-3 days.
Freeze: You can easily freeze these Low Carb Blondies. Wrap individual Blondies with parchment paper and then you can store them in a ziplock bag in the freezer for upto 6 months.
