How to make Chicken Parmesan Casserole?
Step 1: Cook the Pasta
- You start by cooking the Pasta until al dente.
- I use Penne Pasta. You can use Rigatoni or any Pasta of your choice.
- Cook the Pasta with salt and water until al dente.
Step 2: Coat the Chicken
- Cut the Chicken breasts into small 1" bite sized crumbs
- Set up a breading station
- In a bowl whisk together Cornstarch with all the spices
- Crack in two eggs in a bowl and add breadcrumbs in another bowl
- Coat the Chicken pieces first with the Cornstarch mixture, then with the egg mixture and finally with the breadcrumbs mixture.
STEP 3: Cook the Chicken
- Heat Olive Oil in a skillet and add the Chicken Breasts to it.
- Cook until it gets crispy over medium high heat for 10 minutes.
STEP 4: Assemble the Casserole
- Add the cooked Pasta to a casserole dish
- Top with crispy chicken. Pour in the Marinara sauce over it
- Top with shredded Mozzarella & Parmesan Cheese
- Bake @350F or 180C for 15 min.
STEP 5: Serve
- Once the cheese gets golden brown on top, cut and serve.
Variations & Substitution:
- Whole Wheat Pasta: You can use healthy whole wheat pasta or lentil pasta to make this Pasta casserole even healthier and high in protein
- Rotisserie Chicken: You can use Rotisserie Chicken instead of chicken breast. It will save a lot of cooking time for you.
How to make Chicken Parmesan Casserole ahead of time?
You can cook the pasta, add the chicken and marinara over it and cover and refrigerate or freeze this. You can freeze this for upto a week in advance.
Right before you're ready to serve, top with extra cheese on top and bake in the oven. You do not have to thaw it before baking. Just bake for an extra 10 minutes.

Chicken Parmesan Casserole
INGREDIENTS
- ¾ pound Penne Pasta
- 32 oz Marinara Sauce
- 500 gm Chicken Breast
- 3 cup Mozzarella Cheese
- 3 cup Parmesan Cheese
- ¾ cup Cornstarch
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Italian Seasoning
- 1 teaspoon Salt & Pepper
- 1 teaspoon Red Pepper Flakes
- 1½ cup Panko Breadcrumbs
- 2 large Eggs
- 2 tablespoon Olive Oil
INSTRUCTIONS
- Cook the Pasta until al dente. Drain and set aside.
- Chop the Chicken Breasts into 1" cubes. Combine Cornstarch with Onion Powder, Garlic Powder, Italian Seasoning, Red Pepper Flakes, Salt & Pepper.
- Crack and whisk two large eggs. Add the Panko Breadcrumbs in a separate bowl.
- Coat the Chicken Breasts. First with the Cornstarch mixture, then with the egg mixture and then with the breadcrumbs mixture.
- Heat Olive Oil in a skillet and as the oil shimmers add the chicken. Cook for 10 min until they get crispy.
- Add the cooked pasta in a casserole dish. Top with crispy chicken. Pour Marinara sauce over it. Top with shredded Mozzarella and Parmesan Cheese. Bake @350F or 180C for 15 min.
- Once it gets baked, serve.
