Well, the first time I heard it, I was like wait - is it a marriage material chicken recipe or has it got some superstition related to marriage. I waited for the longest to get that superstition pass me only to realise that I shouldn't have waited this long for a chicken recipe that'll make anyone say - "I'll marry you for that".
It's this creamy garlic sauce with sun dried tomatoes and italian herbs that brings in a fresh aroma and a delicious creamy taste to the chicken.

To Make Marry Me Chicken Pasta all you have to do is just make marry me chicken as per the recipe instructions and then serve it with a pasta of your choice.
You can use any dry pasta that you like. Cook the pasta as per package directions. Reserve some pasta water. Drain and set aside.
Make Marry Me Chicken as per the recipe instructions.
Add the pasta to the creamy garlic sun-dried tomato sauce along with the leftover pasta water depending on the consistency of the sauce that you want.
Cut cooked chicken into slices and place back on the pasta.

The recipe for Marry Me chicken is pretty easy and straightforward. What you do is basically sear seasoned chicken breasts or chicken thighs until golden brown and cooked on both sides.
Then, you remove the chicken and use the leftover drippings to make a creamy garlic sauce with sun-dried tomatoes and heavy cream or half and half.
As a personal choice, I've replaced heavy cream or half and half with coconut cream. That doesn't mean you must use coconut cream. You can use heavy cream or half and half if you want. But, I have to say, coconut cream, takes the taste to an another level.

How to make marry me chicken sauce
Once you've seared your seasoned chicken breasts in the oven or in the crockpot or in the skillet, it's time to make the sauce.
Here's how to make Marry Me Chicken Sauce:
- Once you've removed the chicken breasts from the skillet there will be some leftover drippings in the skillet.
- In the same skillet add some of the oil from canned sun-dried tomato.
- Add in a cube of butter and minced garlic.
- Lightly brown the garlic and add sun-dried tomatoes.
- Cook for a few minutes and now add coconut cream and chicken broth.
- Simmer for 5 minutes on low heat.
- Add seasoned chicken breasts back to the skillet.
- Simmer until the sauce reaches your desired level of thickness.
- Season with salt and pepper as per your taste.
- Garnish with italian herbs and serve.
If you want to make Marry Me Chicken Pasta, then you can add cooked pasta at this time back into skillet.

One of the best ways to cook chicken breast is to batch cook them. To do that, first make sure your skillet is hot. Add olive oil and swirl the pan to coat the pan completely.
Place seasoned chicken breasts making sure to not overcrowd the skillet.
Cook each side of chicken breasts for 4-5 minutes on medium-low heat or until completely cooked through.

INGREDIENTS
- 3 large chicken breasts boneless and skinless, sliced lengthwise into thin cutlets
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic minced
- 1 cup (240ml) chicken stock
- 1 cup (240ml) coconut cream can be replaced with equal quantity of heavy cream
- ⅓ cup sun-dried tomatoes chopped
- ½ teaspoon italian seasoning
- ½ cup parmesan cheese grated
INSTRUCTIONS
- Season the chicken breasts with salt and pepper.
- In a large skillet heat some olive oil. Swirl pan to coat the oil evenly.
- Brown the chicken - Make sure you don't overcrowd the pan - for 4-5 minutes each side or until fully cooked through. Remove from skillet and transfer to a plate.
- In the same pan add cubed butter and some of the oil of sun-dried tomato. Allow butter to soften over low heat.
- Sauté garlic for a minute until light brown and fragrant.
- Add chicken stock and deglaze the pan. Scrape any bits at the bottom of the pan using a wooden spoon.
- Adjust the heat to medium-low and add heavy cream. I added coconut cream instead.
- Add parmesan cheese to the skillet. Allow the sauce to simmer and then season with italian seasoning. If not using italian seasoning then use 1 teaspoon chili flakes, ¼ teaspoon oregano and ¼ teaspoon dried thyme.
- Season with salt and pepper as per taste. Add chopped sundried tomatoes. Add chicken back into the skillet.
- Simmer the sauce and let it thicken until it reaches your desired level of thickness.
- Garnish with chopped fresh basil and serve over warm pasta. I served it with my favorite mashed sweet potatoes and steamed broccoli.
