Very good induction skillet
I bought this skillet after reading a review on Wirecutter which gave it a sparkling recommendation. I read many other recommendations on Amazon too which were also quite positive. Among the comments was how easy it was to clean. Many reviewers noted they put the skillet in the dishwasher. I re-read that information multiple times as this made no sense to me since it is a carbon steel skillet. When I received the skillet the accompanying instructions clearly state there is only one time where soap should be used on the skillet which is for an initial wash. After that it should only be cleaned with hot water and a scrub brush or sponge and should NEVER be put into a dishwasher. If it requires a deeper clean it should only be done with hot water and salt. We have used it for a week and so far it is working well but cleaning regimen is different and the skillet must be dried immediately to avoid any rust formation. I certainly hope it will turn out to be more reliable than the previous induction skillet I purchased. I plan to update this review after a longer period of use.

This oxo carbon steel pan has been incredible. It is light but very well made with great heat distribution, no warping, excellent handle, holds seasoning well and is incredibly non stick. I cook for one, so a small skillet is a kitchen essential, and this one seems nearly perfect. It was basically non-stick right out of the box, heats up quickly, and is easy to clean and maintain. And since it's carbon steel, it'll probably outlast me - no worries about a non-stick coating getting scratched or wearing off. The removable rubber grip is also a nice feature. All pluses, no minuses.

On a glass top, this thing transforms into a beyblade. Seriously, even on low heat it warps and becomes a spinner, but it does return to normal shape after cooling. The thin and light material makes it easy to maneuver, and incredibly fast to heat up- I mean literally, 30 seconds on medium will have butter smoking. The downside is also the weight- hard to maintain a stable temperature, warping, and hard to get a good sear on both sides of meats- plus the fluctuation can damage the seasoning. Overall, it's a good pan. A great option for those switching from aluminum non-stick, but it doesn't provide the same performance as a traditional carbon steel.

Let me preface this review by stating that I own a number of high maintenance kitchen wares. I know how to read and follow specific cleaning instructions. This wok was doing ok after two or three uses but eventually deteriorated. I couldn't go above gas flame 2 without worrying about the base which is less than ideal for cooking most things in it! Then there is the cleaning/priming. I steered clear of anything abrasive, even a sponge until I simply had to use a soft sponge one time and although it managed to get the stuck on salmon skin off, it somehow left scratches like I'd used iron wool. Now it's far from non stick and essentially useless. A somewhat expensive waste of time.

This pan was recommended by NYTimes Wirecutter and it is a very good recommendation. It functions as though it is nonstick pan, but in fact it is carbon steel with a smooth surface that is easy to maintain by washing and drying after use and applying a little olive oil to maintain the surface. It is the best pan I've found for frying eggs, cooking French toast, and sautéing vegetables quickly.

I like this pan. Bought it because I needed a induction compatible pan. It’s probably not seasoned completely yet, but it does a fairly good job of not sticking. Fried eggs are still a challenge to not get to stick, but as I said, still not totally seasoned. Does not heat as evenly as a good iron skillet-edges not as hot- but nothing heats as evenly as iron.

Overall, well made and feels solid. Good size if cooking skillet meals for two. Would definitely buy again.

I avoid non-stick cookware like the plague and prefer carbon steel, so I bought this one because it said "pre-seasoned" in the description and a certain product testing organization I follow rated it highly. As soon as I washed it right out of the box I could tell it was not seasoned with heat and oil, the water beaded up too easily. It felt and behaved exactly like a non-stick coating.

So I contacted OXO, who directed me to the manufacturer (they don't make their own cookware), The Cookware Company. From there I drilled down into Green Pan, one of their subsidiaries that makes the OXO pan, whose claim to fame is a "non-toxic ceramic non-stick coating". They claim it is non-toxic because it is made of a ceramic derivative of sand, and the manufacturing process doesn't use PFOA or PFAS chemicals.

That's lovely, but I have no reason to believe it is safe other than their claims. A little bit of research into "non-stick ceramic coatings" revealed that they are made with other, potentially toxic chemicals, and I couldn't find any published studies on their safety. I'm giving it three stars because it's a well-made pan, it certainly feels solid and sturdy, and the silicone grip on the handle is nice, but I don't trust it for cooking my food, especially when they deceptively call it "pre-seasoned" instead of "non-stick". Are they hiding something? I'll just stick to my good ol' oil-seasoned carbon steel wok.
