Multi-ply construction has 2 layers of stainless steel between an aluminum core along base and walls. Cooking surfaces and lids are made of polished 18/10 stainless steel that is durable, looks great, and cleans easily. Aluminum core for even/quick heat distribution and prevents hot spots. The choice of pots and pans should cover most needs except for a wok, which is available separately. The large skillet/fryer is heavy and will require two hands to lift. The same is true of the stock pot. The steamer will fit with any of the pots in the set. The bases are wide and cover most flames or electric elements. Induction heating works great.
If you try to use these the same way you would use Teflon or equivalent, you will have problems.
How do you use the pots and pans properly?
Season the pans. Look the process up on YouTube. The short version is heat the pans on med-high heat with a fair bit of high-temperature oil. When the oil begins to smoke but before you get a brown burn surface take the pans off the heat, use a paper towel or rag to cover all surfaces with oil then let cool. Wipe off excess oil after cooling. Be very careful when coating the hot pans with oil. It's easy to burn yourself. If you don't do this you will likely have food stick terribly.
There is no plastic or silicone grip on any surface. You may need to use a pot holder when grabbing a handle or pot lid, though I generally don't.
Be aware that triple layer steel is pretty heavy. Sets with aluminum bottoms added to the cookware might be better for some.
Don't use the dishwasher for any pan you will fry with. That will strip the seasoning. Wash by hand with soap and water. You can soak the pans after they cool a bit to ease washing.
When cooking, use a lower heat than you're used to. Let the pans warm up before putting anything in them but oil. For frying, you shouldn't need a heat higher than medium or one click cooler. It's okay to turn the pots up to high to boil liquids.
Never use bleach on the cookware, that includes dishwasher soap with chlorine in it, as most have. The chlorine will pit the surface. That may be a tiny amount but the effects add up over time. The dishwasher is okay (with non-chlorine cleaner) for pots that only heat liquids, as you really don't need non-stick unless you sauté something.
If food is burned on, you can usually loosen it by filling the pan with water and simmering it for a few minutes.
If pans discolor there are three ways to get rid of the discoloration. I'll offer them in order of effectiveness.
Soak the pans in warm water with a lot of vinegar or lemon juice. The acid will probably remove the color.
Soak the pans in warm water with Oxyclean or or other oxygen cleaner.
If the first two methods fail, scrub the pans or pots with Barkeeper's Friend.
Boiling water in the pots and pans before you season them may help reduce discoloration as it removes any gunk that's on the inside of the cookware.
All of these methods will probably remove the seasoning. Repeat that process to make the pans relatively non-stick.
You can use stainless spatulas and spoons with stainless cookware but you will scratch the inside a bit. You can also use the sponges with a Scotchbright pad or equivalent on them. Again, that will scratch the surface. I expect my pots and pans to show a bit of wear, so I don't care.
If you are not willing to take the extra care that stainless cookware requires you will probably be happier with some kind of non-stick.
I came across this set in a review on stainless cookware which compared it to the Cuisinart 12 piece and an All-Clad Tri-ply set(s). I felt that the price showed that the set was too good to be true, but the positive reviews convinced me to place it on my "Wish list," where it sat for the next few months as I slowly convinced myself to try it and researched how to cook with stainless steel. I finally took the plunge and purchased the set, and I am so glad that I did.
The set came over-packaged, the boxed 12 piece set was inside of another 3 boxes with various paper and air packets in between layers. I really felt that this was overkill, but my cookware was not damaged by shipping in any shape or form so maybe I should just be grateful. Each piece was beautiful and washed up and dried with no spots or scratches from my novice hands. I put them up, donated my Teflon cookware to a local second hand shop and proceeded to eat out for a week and a half because I was so afraid to use them!
Finally I broke down and made my food. I read and re-read how to properly heat the pan (as someone who would often turn the burner to high and then down to medium, this was important). I prepared all of my ingredients and got everything ready. I used water to test the pan, delighted at the little ball of water floating around the pan, and then dove into make tacos. As I cooked I was surprised that the ground turkey used was not sticking; not even a little bit. I took pride in my water using pre-heating the pan knowledge and kept going. The meal was wonderful, the pan heated evenly and cooked the meal in less time than my thin chipped Teflon pans had in the past (with no potential Teflon flakes). The meat slid out into the storage bowls after dinner was over and I set to washing it. Pleased with my new cooking prowess and determined to try eggs next.
I hand-washed the pan with warm water and free and clear soap, and then spent 30 minutes freaking out when a blue discoloration appeared at the bottom on the dried pan. I scrubbed vigorously; yet gently, with Bon Ami thinking that I had ruined my brand new pans, which I knew were too good to be true and a Teflon lover like me could never handle. Then I stopped, breathed, and hit Google again. Bon Ami was working, but I couldn't see scrubbing everything with Bon Ami at every wash. I then realized that I still overheated the pan, and that a splash of vinegar in warm water would clear the discoloration right up. Sure enough it did, and I had a beautiful pan for my novice self again! My confidence was restored. I placed the pan back in the cabinet and finally forgave myself for throwing out all of my old pots and pans.
I am very pleased with the set and feel that I will get many uses and wonderful meals out of it. They have forced me to be a more conscious and prepared cook, and to be mindful of the things I would ignore before (like how to preheat a darn pan). I may even try scrambled eggs next ;) I definitely recommend this set for the stainless steel novices like myself or even the long time users. Each piece is useful and I truly feel that this set covers all of the cookware that I need (aside from my cast iron dutch oven and skillet). The pans are weighted well, and heat beautifully. The handles stay cool due to the design (which you always hear, but rarely experience). After unboxing, I could tell the quality right away from the well-balanced heft. They are heavy without being difficult to maneuver, just right to inspire confidence. The handles are perfectly sized and shaped, and the attachment point seems very durable- they are comfortable to hold and move the pan around while cooking (I have small hands and maneuvering heavy pots with badly designed handles is tiring and can cause a mess if it slips). The first thing I cooked was a fried egg in the 8 inch fry pan. A minimal amount of butter, and it cooked up beautifully without sticking. Heat was perfectly distributed, even on my crappy apartment electric stove top. The pan cleaned up quickly with a bit of soap and hot water. I recommend hand drying these to prevent water spots, but the water spots will buff away quickly with a kitchen towel if you air dry.
One important thing to mention is these *look* gorgeous, too- they didn't skimp on aesthetic design. I won't be embarrassed to have these sitting around on the stovetop.
I'm confident these will get many, many years of frequent use and greatly improve my cooking enjoyment. I'll post updates to this review if I experience any issues down the road.
