One day I looked at my dull and chipped knives and decided enough's enough. I had been using a Wusthof pull-through knife sharpener for years. Even though it had both steel blades and ceramic slots, with angles for both western and Asian-style knives, it seemed that the more I used it, the worse the chips got. So I educated myself on knife sharpening. I got some Japanese style water stones and a diamond sharpening stone and learned to use them. It was fun and interesting and relaxing in a meditative sort of way. But it took quite a bit of time to set up and use and a lot of practice to really get good at it. Browsing the knife aficionado forums, I found that many experts prefer a guided sharpening tool. Among the favorites, and one of the less expensive ones, was the Spyderco Sharpmaker. So when Prime Day came around, I went for it.
The tool is lightweight, compact, and safe to use with sharp knives. It is set up to put a sharp edge (with a 20 degree setting for western knives or 15 degrees for Asian knives) on practically any bladed tool, including scissors and most serrated knives. It's really easy to use, and just about any adult can have good results with it. I won't try putting into words how to use it -- just watch one of the many videos already out there. It doesn't take much room in the drawer, and it's ready to go in under a minute. You can use it to relatively quickly get a knife edge that will slice through paper, with no special expertise. If you want to go further, to get to a "scary sharp" level, a few more strokes on a leather strop or a very fine ceramic honing rod (not included) will get you there. There are also optional ultrafine Sharpmaker rods available that are said to do the same thing, but I haven't used them, so I can't say from personal experience.
Generally speaking, if your knife is in decent shape to begin with, this tool will hone it to a sharp edge for you and keep it there. If your knife is badly chipped or needs to be reprofiled, you have some options. 1) You could work on it with the standard Sharpmaker rods, but it could take a very long time. 2) You could use bench sharpening stones to fix the edge and then maintain it with the Sharpmaker. 3) You could get it professionally sharpened and then maintain it with the Sharpmaker. If you only have a few knives, this could be a good option. 4) You could buy the optional diamond or cubic boron nitride Sharpmaker sharpening rods. These do a great job (I have used the diamond rods), but unfortunately they aren't cheap. Depending on prices (kit prices fluctuate a lot), they can cost nearly as much as the Sharpmaker kit itself.
The Sharpmaker is a great tool for sharpening almost all knives. The basic rods may not be optimal for the hardest super steels / powder steels (though some say they work just fine) -- if you have that kind of steel, you know who you are. For the rest of us, I couldn't recommend it highly enough. I've read of people using these for 20 or 30 years. The rods can break if they're dropped on a hard surface, but they can be replaced for a reasonable price.
There's only one problem with it. Sooner or later, you're going to run out of blades to sharpen!
After several months of use, the Wüsthof sharpener put gouges in my knives. I had to take them to a professional to have them corrected. He told me that sharpeners like the one I used are the worst you can buy (and he should know, he's been professionally sharpening knives for over thirty years). I asked him if there's an inexpensive sharpener I could buy to keep my knives in shape. He recommended the Spyderco Sharpmaker. I bought one. And I like it.
PROS:
1. Most importantly, it works. A lot of people test the sharpness of their knives by cutting a piece of paper. I had several knives that couldn't pass that test. After sharpening with the Spyderco, they all pass the paper cutting test.
2. The Spyderco Sharpmaker isn't hard to use. Just hold the knife straight, and draw it downward on each side in a slicing motion. No special skill, practice, or technique is needed (like when using a whetstone).
3. It won't leave scratches on the sides of the knife. Maybe this is no big deal to you. But if you have some new knives that you want to keep looking new, it's annoying to discover that your sharpening system scratched up your knife. With the Spyderco, nothing comes in contact with the sides of the knife. There are no clamps that can leave marks. Nor are you required to lay the knife on its side, where it can pick up grit and get scratched. And unlike many electric knife sharpeners, there are no guides that can leave long horizontal scratches.
4. It has brass safety rods to keep you from getting cut.
5. Unlike some sharpening systems (or a whetstone), the Spyderco uses no oil or water.
6. It's made in the USA.
CONS:
1. You'll need to clean the stones periodically. They pick up metal particles from the knife. And if the stones are saturated with metal particles, they no longer work effectively. I clean mine using a Scotch-Brite pad, a little Ajax or Comet, and some water. Cleaning the stones doesn't take long. I can clean and dry all of the stones in the kit in less
than five minutes.
2. It doesn't have infinitely adjustable angles. For sharpening knives, the stones are set at either 30 degrees (15 degrees on each side), or 40 degrees (20 degrees on each side). I use the 40 degree setting for all of my kitchen knives.
3. This is not a "professional" guided sharpening system. If that's what your looking for, systems like the Edge Pro Apex, Wicked Edge, or KME would be a better choice. But those systems cost a lot more money.
SUMMARY: The Spyderco is a simple, inexpensive, sharpening system for home use. According to their manual, it will sharpen scissors (but I haven't used it for that purpose yet). The stones can also be used free-hand to sharpen garden tools, etc. But again, I've only used it so far to sharpen my kitchen knives.
If your knives are in really terrible condition (deep gouges, etc.), I recommend that you have them professionally sharpened. Once you get them back, take care of your knives and use the Spyderco to keep them in shape.

Comme tous les amateurs de cuisine, j'ai une ribambelle d'accessoires d'affûtage, accumulés au fil du temps pour tenter en vain de trouver la perle rare. Je peux enfin m'en débarasser.
On peut argumenter que l'objet n'est pas donné, mais en contrepartie on fait l'économie de tous les autres accessoires d'affûtage qui ne marchent pas. Donc si on commence par celui-là, on y gagne probablement.

The manufacturers have opinions and convey you them, which is excellent; for example, they recommend cutting angles and say why.
The devices comes with two "medium" ceramic stones and two "fine" ones. All these stones are triangular in profile. The main advantage over "plain" stones is that the device keeps the grinding angle consistent -- not by clamping the knife, like some ultra-expensive devices, but by having you keep it vertical (which is fairly easy), with the stones angled, rather than you holding the knife at an angle to a horizonal stone. The basic sharpening sequence advised is 20 strokes per side for (a) medium, using the edge/corner; (b) medium, using the flat; (c) fine, using the corner; and (d) fine, using the flat. If you have knives that have been particularly abused (e.g. put through a dodgy wheel-based sharpening device) then I found it helpful to start with 20-40 strokes per side with a diamond "stone" (Spyderco SPY-204D Tri-Angle Diamond Sharpener, sold separately) to get the edge back to the right shape. (Possibly the medium stone would have done the job given a lot of patience, but this was definitely helpful.)
The booklet and DVD (or YouTube video) also show you how to sharpen things other than "plain" knives -- such as serrated blades, scissors, potato peelers, and so on.
The whole thing is definitely pricier than cheap wheel-based or scraping sharpeners, but there are much more expensive things out there too. Good value, I think.
