Unsettling fact: Most grass-fed beef organ meats go to landfills to rot. Why? Several reasons: #1- White folks like me don't know that those organ meats are the most nutrient-dense parts of the animal, so we don't buy it #2 - Black and brown folks who do know that organ meats are super valuable often don't have access to grass-fed beef for lots of reasons #3 - It's hard for grass-fed meat processors to get the equipment and labor required to prepare these organ meats for sale So what are we going to do about it? We're going to throw a party! If you are a big thinker who loves food, and will be in Colorado this January, come join us! They have enough economies of scale that they can actually save these meats from landfills by cleaning them and sending them to countries who value them. #FallGardenUpdate Here it is! My garden is just about done producing. Overall it was a very good year on tomatoes and peppers. Our zucchini got hit by the squash vine borers as usual. Tried to do some Fall zucchini this year, but it's not looking to pan out for us. I always enjoy the planning part of a garden and the cleanup at the end. Like chameleons, purple islander peppers evolve through an array of colorful coats. They start off a bold purple. They then develop streaks of its complementary color yellow, followed by orange, until finally turning a vivid red color as they ripen further. They can be consumed at any of these vibrant phases, but we quite enjoy this stage when their flavor ressembles that of a crisp green bell pepper. We love this time of year and the arrival of purple heirloom varieties.
