In the airline industry, two is one and one is none. Do we fly with only one engine? No. Do we fly with one hydraulic system? No. Do we tie critical flight systems to a single sensor? No. We don’t do these things for reasons written in blood. Redundancy is an integral part of our safety record and we shouldn’t conduct operations without it.
And if the right question was « how a single pilot operations, assisted with new technologies, could be as safe as multi pilot operations with today technologies ? » Did someone clearly state that single pilot operations are safer? Also I don’t know why some organisations are interested with single pilots ops. Not sure it is to reduce cost (and frankly is it true in a long term perspective?). They could be more motivated by facing pilots shortages.
Sparing on a salary of a pilot with single pilot ops?? The cost of safety is only fully understood when one pays for an accident.
I'm horrified that this possibility has even been tabled. Never would I set foot on an airliner that has just one pilot. Just another example of how far from common sense the world has moved.

2wA minimum of two pilots on multi leg airliners domestically and at least three pilots on international flights is the absolute minimum to ensure the safety of passengers and crew. After 54 years in aviation that is a lesson observed written in blood.
