Food unites us. It is linked to our emotions and is integral to our experience as human beings. And yet, as much as it joins us, our connection is personal. We can all relate to how a particular food makes us think of home, feel connected to our culture, or ignite a fond memory. Food is also essential to our health. Culinary medicine is understanding the links between food, health, and well-being. In culinary medicine, the social, cultural, and emotional aspects of food are paired with nutritional science to act in tandem with medical interventions in disease prevention. In an inspiring initiative during National Nutrition Month, fourth-year medical students at the University of Arizona College of Medicine Phoenix are taking their learning from the classroom to the garden as part of The Culinary Medicine Program. These students are not just learning to cook; they are learning how to use food as medicine from nutrition experts, physicians, chefs, and local farmers. And more importantly, they are taking this new knowledge to the community to empower communities to use food as medicine to prevent, treat, and reverse the chronic diseases of our time. Diet is the number one risk factor for preventable disease and death worldwide, yet medical students get an average of only 19 hours of nutrition education across all 4 years of medical school. Our goal with this program is to redesign medical education to fill this critical gap with a unique hands on service-learning model that embeds students in the community. On tonight's menu: Golden lentil soup, sweet potato stuffed with black beans, and cancer prevention. This semester, 28 first-year medical students are learning about culinary medicine, which pairs nutritional science with preventative health care. Developed by medical class of 2026 students Sarah Krumholz and Molly Hurd, and working with faculty advisor Whitney Calkins, M.D., assistant professor of family medicine, this course teaches about lifestyle interventions for chronic disease. Each class focuses on a medical aspect of diet, including controlling obesity, cardiovascular disease, diabetes, cancer survivorship, and nutrition through the lifecycle. Following a didactic segment, the students cook together as a group. “I’ve asked a physician for help with my diet, and he said he didn’t know enough about it. I want to be able to understand the macronutrients and micronutrients and give real advice.
