Hotel Food & Beverage Manager

SUMMARY: Responsible for the efficient and effective operation of assigned Food and Beverage outlets. The position will provide leadership and direction to Lead and Frontline Team Members to ensure outstanding guest service and consistent quality products.

Essential Responsibilities and Duties: (Specific areas of responsibility including, but not limited to)

  • Directs and organizes the activities of the department team to maintain high standards of product quality, presentation, creativity, consistency, and service.
  • Ensures the highest level of guest service is provided by all department Team Members. Plans and administers a training and development program within the department.
  • Provides coaching and counseling in an open communication environment, monitors performance and conducts necessary Team Member conversations, discipline, and/or termination when appropriate.
  • Develops, implements, and monitors effective control of product, equipment and labor costs.
  • Understands the proper ordering practices and works closely with purchasing department and outside vendors to ensure adequate product levels while maintaining correct costs and maximizing revenue growth.
  • Responds promptly and effectively with internal and external Guests, some of whom may require high levels of patience, tact, and diplomacy to defuse anger, collect accurate information and resolve conflicts.
  • Understands, follows, and enforces all Food & Beverage policies and procedures approved by Black Oak Casino Resort.
  • Communicates with management, peers, and subordinates in a professional, positive and consistent manner.
  • Communicates both verbally and in writing to provide clear direction to Team Members.
  • Conducts regularly scheduled staff meetings, daily shift meetings, and ensures staff attendance at all company-scheduled communication meetings and training classes.
  • Implements new offerings and promotions, such as holiday and special event promotions.
  • Ensures all Team Members are trained and current with Black Oak Casino Resort’s Responsible Alcohol Service Program and that the department adheres strictly to all State ABC requirements.
  • Performs other related duties as assigned.

Mandatory Requirements

  • Must be at least 21 years of age or older.
  • Must possess a high school diploma, G.E.D. or equivalent.
  • Must possess a Bachelor’s degree in hospitality or an equivalent combination of education and previous experience.
  • Must have a minimum of three years of supervisory experience in a hospitality, resort, or casino operation with an emphasis on full-service food and beverage department/outlet.
  • Familiarity with Eatec purchasing/inventory system and POS procedures (InfoGenesis platform) preferred.
  • Must complete California Food Handlers and Responsible Beverage Service certification or have proof of current certification.
  • Must be computer literate. Proficient knowledge of Microsoft Office Suite is required.
  • Must have excellent safety and sanitation skills.
  • Must possess demonstrated organizational, planning, time management and leadership/team building skills.
  • Must be articulate and possess a professional appearance and demeanor.
  • Must be able to multi-task and handle stressful situations in a fast-paced, often crowded/noisy environment.
  • Must be able to exercise judgment on an independent basis and make quick decisions based on established company standards, policies, and procedures.
  • Must be able to obtain a valid gaming license.
  • Must be able to pass a mandatory drug test.
  • Must provide evidence of employment eligibility in the U.S.

Physical Demands

  • Must be physically able to perform all job requirements.
  • Must be able to lift 25 lbs. and more with assistance.

  • Must be able to work outside in all weather conditions.
  • Must be able to work all shifts, weekends, holidays, and special events.
