System One is currently seeking a strong Baking Process Engineer in Houston, Chicago or remote if willing to travel.
Baking Process Engineer Responsibilities
Ingredient mixing to achieve the right balance of dough handling properties, such as elasticity, resistance to deformation, and stickiness.
Moving the dough volumetrically using a screw feeder or dough pump. Understanding that the speed of the screw or pump which controls the rate of dough flow can also impact dough consistency and density adversely impacting quality.
Dividing dough into dough balls. Weight control is critical to minimize yield loss.
Forming / shaping dough balls for buns or loaf bread.
Sheeting dough for tortillas
Panning, proofing, baking and de-panning
Cooling finished product
Freezing dough
Cake batter makeup
Review/confirm production rates, process flow diagrams and P&ID’s.
Help develop RFPs to be issued to preferred OEM’s.
Assist owner in coordinating communications/bidding/selections with OEM processing systems for each line.
Baking Process Engineer
Bachelor Engineering Degree in Mechanical or Chemical
Baking and freezing dough process for industrial bakeries
Subject Matter Expert in Baking process
