When I want to sell items and select a category, there's this number in a big arrow in the middle. Which is always set to the full amount of that object. I can't select only a few? Let's say I've got 15 baseball bats, that number would say 15. But I can't choose only to sell 7 for example? It's always all or nothing?

if you're on PC, the arrow keys should allow you to adjust the number. You can also use the mouse to "grab' the slider.
if on console, I forgot. Should be able to adjust the quantity by using the D pad or analog sticks?

Yep, use the left stick to change the quantity.
