SAMPLE RECIPE: Corn on the Cob with Chili and Lime

SERVES: 6 / PREP TIME: 5 minutes / COOK TIME: 4 1/2 hours (LOW), 2 hours (HIGH)

Fresh corn on the cob is a delicious part of summer meals. This recipe goes beyond plain corn on the cob and takes it to the level of Mexican street food with the addition of chili powder and lime. If you’ve never cooked corn in the slow cooker before, you are in for a treat. Since the corn steams inside the aluminum foil instead of boiling in water, it doesn’t lose any of its flavor. When you unwrap the packets, you’ll have perfectly cooked, tender, buttery corn with the refreshing flavor of chili and lime. Best of all, this method is great when you are cooking for a crowd.

Instructions:

1. In a medium bowl, mix together the butter, lime juice, chili powders, salt, pepper, and lime zest until well blended.

2. Cut six large squares of aluminum foil, and place an ear of corn in the center of each square. Cover each ear of corn with 1 tablespoon of the butter mixture.

3. Wrap corn tightly in the foil.

4. Place the wrapped corn in the slow cooker, and cook on low for 4 1/2 hours or on high for 2 hours.

5. Unwrap the corn and add more seasonings if needed. Serve hot.

INGREDIENTS:

  • 6 tbsp unsalted butter, at room temperature
  • 1 1/2 tbsp fresh lime juice
  • 1 1/2 tsp chili powder
  • 1/2 tsp ancho chili powder
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp lime zest
  • 6 ears corn on the cob, husks and silk removed

Marye Audet (1960-) is a Christian, a mom, an artist, a writer, a friend... She has been described as Martha Stewart meets MacGyvere and that is probably the closest anyone has come to being able to categorize her.

Marye is deeply involved in the ongoing restoration of 4300 square feet of potential just outside Dallas, Texas. The house is a 100 years old and reflects her interest in all things historic, antique, and country.

Instructing comes naturally. Marye has been homeschooling since the dark ages, (1989) and will be homeschooling far into the future. Marye is the mom of 8 children, the oldest of which was born in 1982 and the youngest born in 2003. All of the children are excellent cooks and enjoy being part of whatever is going on in the 500 square foot kitchen. She recently married Marc White, a brave and courageous man willing to take on the challenge of a rambling house in need of repair and the six kids still at home.

Besides cooking, homeschooling, and historic home restoration, the family raises heirloom Barred Rock chickens and is moving toward a more sustainable, self sufficient lifestyle.

This book contains over 80 recipes and covers a large variety of Mexican dishes divided into categories of Dips and Appetizers, Stocks and Soups, Vegetarian Dishes, Seafood and Poultry Dishes, Meat Dishes, Side Dishes, Desserts, and Kitchen Staples. The first chapter is an introduction to slow cooker cooking and teaches you the basics and the Do's and Don'ts of slow cooker cooking. This was very helpful to me as I haven't done much slow cooker cooking in the past and this chapter served to familiarize me with this cooking device and the associated techniques. Chapter Two introduces Mexican cooking and gives a brief overview of beloved Mexican foods and common ingredients used. The book from this point on is all recipes divided into categories.I am very happy that there is such a wide variety of recipes included, there is something for everyone. The recipes are concise and easy to follow with the serving size, prep time, and cook time listed for each one. There are foolproof step by step instructions that even novice chefs won't have problems with. I tried making a few recipes from the book and the results were very good, it's amazing how a small amount of work created such great results. The last chapter of the book covers staples of Mexican food that don't involve a slow cooker such as tortillas, salsas, and seasonings. This is a great inclusion as these are essentials and your Mexican meal would be lacking without them.The slow cooker method allows you much convenience in cooking with the ability to prepare ingredients and start the cooking process without being chained to the stove or kitchen. Anyone who knows me, knows I LOVE to cook! I love exploring food cultures from around the world. I love Mexican food! I love all the spices that are used in Mexican cooking! I was delighted beyond belief when I came across this cookbook, entitled, 'Mexican Slow Cooker Cookbook'! I would have never guessed you could make Mexican food in a slow cooker but here I am turning page after page absorbing all the information I can from this book so I can expertly recreate these DELICIOUS recipes!

I was really IMPRESSED that this cookbook took the time to explain slow cooking. You will learn the benefits of slow cooking, the do's and don't's of slow cooking and the difference between slow cookers and crockpots! It will also teach you about the dry and fresh ingredients necessary to a Mexican pantry.

This cookbook then offers simple, flavorful Mexican Dishes. Dishes that in a slow cooker practically cook themselves! This cookbook takes us on a tour of Mexican cuisine and posts favorite dishes in Dips and Appetizers, Soups and Stocks, Vegetarian, Seafood and Poultry, Meat Dishes, Side Dishes and Desserts!

This cookbook ends with kitchen staples, the foundational foods of Mexican cooking. There is also a measurement conversion and an ingredient glossary. I would say this book is not only a great cookbook but is a great reference book as well! It is quite informative and the author explained everything expertly! There are even ingredient tips placed throughout the book!

I have now cooked several dips and the Meat Dish 'Chipotle Beef and Poblano Stew. Not only was it easy to follow the directions but the recipes were absolutely DELICIOUS!! I highly recommend you try this cookbook! It is a keeper!

I have used a slow cooker, or crockpot, to cook meals in for years. It is definitely one of my most used appliances in my kitchen. I LOVE the ease of putting everything into the slow cooker turning it on & then going about my business of doing other things while the meal takes care of itself.

It's just okay - I don't like cookbooks that have no pictures of their recipes. Maybe there are some good recipes there but I like pictures. Would I recommend it - no. Disappointed ......
