The eagerly awaited cookbook from Dale Talde, Top Chef favorite and owner of the acclaimed Brooklyn restaurant Talde.

Born in Chicago to Filipino parents, Dale Talde grew up both steeped in his family's culinary heritage and infatuated with American fast food--burgers, chicken nuggets, and Hot Pockets. I grew up in New Jersey, live in Brooklyn, and write about food and travel. I’ve written for The New York Times, The Wall Street Journal, Gourmet, Saveur, Bon Appétit, Food & Wine, and Every Day with Rachael Ray, among others. The editors of The Norton Reader selected my essay on cooking with one arm for the anthology of non-fiction’s thirteenth edition, which includes writing from Ernest Hemingway, Barack Obama, and Jesus!

Admittedly, I have not cooked from this book yet; but I will. The recipes are so creative and mouth-watering. Pork dumplings given the pretzel treatment?!?! Only a brilliant mind could conceive this. Love the stories about Dale's upbringing and family; made me nostalgic for my own. And I'm so grateful that there is a whole section on how to make the standard Chinese Food Served Everywhere in America, albeit better. As Dale suggests, there's nothing wrong with being inauthentic to the original so long as it is authentic to you. I also appreciate the thorough descriptions of the ethnic ingredients (it's not just Filipino items; I recognized a lot of Korean, Thai, and Indian items as well). Based on my reading, the difficulty level of the recipes is not unattainably high (for example, there is a recipe for bbq sauce that uses store-bought bbq sauce as a base), but some ingredients may be hard to source (then again, we have the internet). Thank you, Dale, for this incredibly creative achievement that really is unlike any other cookbook (of the hundreds) I have. (Also because you are posing in fur and gold chains with scantily clad women IN A COOKBOOK, not a rap video.)

This is a super-fun book of recipes and (Dale's) tales, ranging from the fancy to the trashy (but tasty). I picked it up after visiting Dale's flagship NYC restaurant, Talde, and being blown away by dishes like the short rib kare kare, and kung pao chicken wings, both of which are included in this book. The photography in the book is often whimsical to borderline hilarious, making it just as entertaining to read as it is informative. There's a lot of personality in here, and such a great wide range of dishes.

This guy is a revolutionary in the kitchen. Love the way he infused Asian inspired dishes into American favorites. Very creative and it will give your taste buds a treat.

Interesting- but not always easy. It is a very distinct and special cookbook.

Talde's book has a fun engaging writing voice and gives many tips to simplify the food preparation process. The recipes​ are rooted in tradition but with practical second generation takes on making it easier to prepare (for example, the kare-kare takes an afternoon rather than 3 days!) and some cross-cultural but not quite 'fusion' twists on flavor.

Nice recipes to use stuff you might --- shock -- actually have on hand. "Burrito that!"

I could do without the picture of the girls in bikinis. The recipe I made with some friends was just so-so. On the other hand, it does kind of free the cook up to use instinct and think outside the box. Definitely not stuffy.

Only thing to make it more user friendly would be to include a little map so we knew where to find the restaurants

I was looking for a Filipino cookbook and stumbled upon this and thought, hey why not? I don't know much about chef Talde because I'm fairly new to the cooking game. I am well aware that these recipes are in-authentic and appreciate that he stays true and keeps stuff real simple.

Call me a no-fun-nancy if you must. I am knocking off one star because I'm pretty conservative and didn't really expect any profanity throughout this book (Sorry chef Talde). I enjoyed this cookbook overall and am going to hang onto it and take the time out of my day to blur out the profanity and remix this book into a clean version LOL.
