Beef and Black Bean Chili

True Texas chili is widely recognized as a bowl of beef chuck -that has been seasoned with dried chiles, tomatoes, and spices and simmered until it’s meltingly tender. Beans, if included at all, are most often pintos. This recipe swaps in black beans for variety and chili powder (a mix of ground chiles and spices such as oregano and cumin) for convenience.

Recipe | Serves 4

Place beans in a bowl; cover with water by several inches. Refrigerate, covered, overnight; drain. (To quick soak, cover beans in a large saucepan with water. Bring to a boil. Remove from heat. Let stand, covered, for 1 hour; drain.)

Preheat a 5 to 6 quart slow cooker.

Add beans. Add beef, tomato puree, onion (reserve 1 tablespoon for garnish), garlic, chili powder, the hot water, 2 teaspoons salt, and ½ teaspoon pepper and stir to combine. Cover and cook on high until chili has thickened and beans are tender, 6 hours (or on low for 8 hours).

Serve with sour cream, reserved onion, jalapeño, avocado, and cheese.

  • 1 pound beef chuck, cut into -¾--inch chunks
  • 1 can (15 ounces) tomato puree
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced

  • Coarse salt and freshly ground pepper
  • Sour cream, diced jalapeño, chopped avocado, and grated cheddar cheese or crumbled queso fresco, for serving

Barley Risotto with Fresh Mushrooms
SERVES 8

You can find recipes for slow-cooker risotto made with traditional Arboriorice, but we prefer the texture of barley here. It holds up beautifully and doesn’t get gummy. Earthy mushrooms flavor the dish the whole way through, while two cheeses and fresh chives round things out at the end.
7 cups vegetable broth, store-bought or homemade, or water.

2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
12 ounces fresh mushrooms, such as cremini, shiitake, or oyster, trimmed and sliced
2 shallots, finely chopped
1 garlic clove, minced
Coarse salt and freshly ground pepper
1 tablespoon fresh thyme leaves
2 cups pearl barley
2 ounces fresh goat cheese (about ½ cup), crumbled
½ cup grated Parmigiano-Reggiano (2 ounces), plus more, shaved, for serving
Snipped fresh chives, for garnish

Preheat a 5-to 6-quart slow cooker. Heat 6 cups broth in a saucepan over low.

Meanwhile, heat 1 tablespoon oil and 1 table­spoon butter in a large skillet over medium. Add half the mushrooms and sauté until tender, about 4 minutes; transfer to a bowl. Add remaining tablespoon oil and tablespoon butter, and sauté remaining mushrooms until tender, 4 minutes. Return reserved mushrooms to pan. Add shal­lots, garlic, 2 teaspoons salt, ¼ teaspoon pepper, and thyme; sauté for 2 minutes. Add barley, stir­ring to coat well. Increase heat to medium-high, add remaining cup broth, and cook, stirring to combine, until completely absorbed, about 4 minutes.

Transfer barley mixture to the slow cooker. Pour in broth and stir to combine. Cover and cook on high until barley is tender but still firm, 2 to 3 hours (or on low for 5 to 6 hours).
Before serving, stir in both cheeses with a fork until melted. Season with salt and pepper. Serve topped with shaved cheese and chives.

Innovative and adventurous recipes - not a disappointment!
While I saw a lot of low "disappointed" reviews for this book, I think it is innovative and each recipe is an adventure to explore! If all you want to do is throw a bunch of ingredients together, not try different ethnic foods or not take the time to take the steps to make a delicious meal, this book is not for you. I have plenty of basic slow cooker cookbooks, but most of those recipes are either boring or bland. The first recipe I tried was the barley mushroom risotto -- it was flavorful, creamy and delicious. I can easily see making this recipe with asparagus.. Tonight I'm going to try the cilantro chutney chicken recipe. Sure, there are more steps to do and dishes to wash, but if you love cooking like I do, if the result of your efforts is a delicious restaurant-quality meal, the extra work is worth it.Update : Made the chicken with cilantro chutney and it was fabulous!

Several reviewers didn't like how there were several steps in the recipes. I guess they wanted the kind of recipe where you just throw everything in the slow cooker and leave it. However, having used a crock pot for years, I've learned that (for example) pre-browning beef is necessary for good flavor and texture. The recipes do require a slow cooker that has at least two temperatures. Lots of good recipes and ways to use a crock pot that maybe you hadn't considered.

Seller described the book perfectly. Just one minor red mark on the bottom of the book, otherwise it is perfect. As for the content of the book, all I can say is God bless Queen Martha and her team. Most of the ingredients used are household staples and not overly expensive. I love that the team tested all recipes and gives advice about the most favorable outcomes. I already made the Carbonnade, and I used a tri-tip roast. Came out beautifully. We served some salt potatoes and green beans on the side and have enough for 3 dinners.

But it is the book to elevate your cooking. Everything that I’ve made so far has taken a little extra effort that a typical toss-everything-in-the-morning-and-forget-about-it slow cooker recipe, but everything has turned out amazing. You can easily entertain with any of these recipes. Start with the Flemish Stew, Duck Carnitas (toasting pepitas is a must), Beef Stroganoff, Halibut with Eggplant relish…
This is a great resource in the kitchen.
Also worth noting: my 10 year-old twins have loved everything I’ve served them from here.

I saw this cookbook in a TJ Maxx, went home and bought two copies through Amazon (one for me; one for my daughter who is a fan of slow cookers). MANY of the recipes looked interesting, and they ARE. Before I ordered, I read a few negative reviews and noted the complaints about steps outside the slow cooker. Now that I own the cookbook, I see what those reviewers meant. I am retired, so for me these extra steps don't matter IF I want to bother and IF I am willing to wash extra pots, pans and utensils. HOWEVER, these recipes decimate the entire concept of a slow cooker, which device is ideal for working people. You THROW ALL INGREDIENTS into the slow cooker, cover it, turn it on and go to work. Come home from work and dinner awaits! Martha Stewart's cookbook has you spending at least a half hour sauteing or otherwise preparing ingredients BEFORE they go into the slow cooker. I don't know about other people, but when I was working I DID NOT have time for all that (nor did I have the inclination to do so early in the morning).

Bottom line = interesting and tasty recipes but requiring all sorts of kitchen gymnastics BEFORE the slow cooker, IF you want to make them correctly.

This recipe book has something for everyone. Meat, meatless, breakfasts, desserts and they each have a full page photograph of the dish.
I marked eight recipes on my first thumb-through that I want to prepare right away. Also included some clever short cuts and tips for making using the slow cooker more versatile.

Odd recipes, odd ingredients...Tried about 5 recipes, then threw the book out. Easy recipe for stroganoff. Omitted the
horrible accumulation of fat from the meat. Not even edible in the final result. A side dish with dates and squash,
doesn't tell you to peel the acorn squash...miserable to eat. You are removing the peels as you eat it...Also, way too sweet. Just to name a couple I tried...others were as disappointing. What a screw up this book is.

I always thought the slow cooker was for the “white trash spirit within” - This book is incredible. We designate Sunday as Slow Cooker Sunday. Martha is no joke. Her recipes are well thought out, requires some prep BUT always delicious. I can just tell Martha spent days working on each recipe. LOVE this book.
