Our plugin already does that, and you can define the label via WooCommerce > Settings > Product fields. Please check if it is set to “Select Options” there.
I know, but this field is used for both variable and simple products.
On the product list, I need for variable products that the “add to cart” button is “select options”.

The setting I am referring to is for the product list (shop page). If it does not work, your theme or a plugin is interfering with our code and reverting it back. To quickly test this, you can switch themes. If that works, you know your theme is the issue.

I switched to default theme Twenty Twenty Four, and stil the same behaviour: the variable products that have a custom field don’t have the same add to cart button label on the product list.

Hmm. I see that the button design is also different from the other products. Do you have any idea why that is? Did you add custom code somewhere? Can you send a list. of active plugins?
The shop page screenshot I sent you is when I enabled the default theme, so no there was no custom code at this time.
