I understand this to mean that you want to edit the terms assigned to Media Library items using MLA’s Media/Assistant Bulk Edit area; is that right? If so, I can give you some general guidance.
You mentioned “product tags”, which are not part of MLA itself. You can add support for any taxonomy using the “Taxonomy Support” section of the Settings/Media Library Assistant General tab. There you check the “Support” box to add the taxonomy to MLA and check the “Inline Edit” box to add the taxonomy to the Quick Edit and Bulk Edit areas. You can also check the “Checklist” box for a flat taxonomy (like Tags) to change the way terms are displayed and selected.
