Some of that has been implemented in the Pro version as the optional Toolbar Editor add-on. The add-on can move and rename most Toolbar (a.k.a. Admin Bar) items. It doesn’t have all of the features you requested, though: for example, there’s no automatic sorting, and frontend/backend configurations are the same. At the moment, there are no plans to also make this feature available in the free version.
Good to know. Hopefully, you’ll integrate some of those toolbar features into the free version of your plugin in the near future. We don’t need the whole enchilada. Cheers!

Yes, those are good options if you’re comfortable with code. The third link (from digwp.com) is the one that I usually recommend to people who ask how to hide Toolbar items without an additional plugin.
The site adminmenueditor.com is for the paid version of Admin Menu Editor, though, so I don’t think I’ll add them there.
