  • Strawberry cheesecake ice cream sandwiches: I find this variety at Kroger. If you can’t find it, any ice cream sandwich with strawberry ice cream will work.
  • Cool Whip: This freezes well and defrosts without separating like a whipped cream can. It’s rich and creamy but now too sweet.
  • Strawberry ice cream topping: Any brand of strawberry sauce works great here, and it adds more authentic strawberry flavor to the dessert.
  • Fresh strawberries: This is the perfect fresh garnish to finish off the ice cream cake.

How to Make Strawberry Ice Cream Cake

Preparing this ice cream cake takes minimal effort. Once you layer all of the components, the hardest part is letting it firm up a bit before you can have a piece.

  • Layer half the ice cream sandwiches. Place 12 of the ice cream sandwiches on the bottom of the 9×13 casserole dish.
  • Spread half the Cool Whip. Spoon half of the container of Cool Whip on top and spread it evenly.
  • Add strawberry topping. Drizzle the whole jar of strawberry sauce over the Cool Whip layer.
  • Layer remaining sandwiches. Add the remaining ice cream sandwiches.
  • Add the rest of the Cool Whip. Spread the remaining Cool Whip on top.
  • Cover and freeze. Cover the cake tightly with plastic wrap and place it in the freezer. Freeze it until it’s firm, it should take around 3 hours minimum.
  • Garnish and serve. Put strawberry slices on top right before slicing. Enjoy!

  • 1 16 oz container whipped topping thawed
  • 1 jar strawberry ice cream topping
  • fresh strawberries sliced, for garnish

Instructions

  • In a 9×13-inch pan, place 12 of the ice cream sandwiches in a single layer.
  • Scoop half of the Cool Whip onto the ice cream sandwich layer and spread out evenly.
  • Drizzle the strawberry ice cream topping over the Cool Whip.
  • Add the remaining 12 ice cream sandwiches in a single layer.
  • Scoop the rest of the Cool Whip on top of the cake and spread out evenly.
  • Cover the cake with plastic wrap and freeze for at least 3 hours until completely firm.
  • Top the cake with slices of fresh strawberries.
  • Cut the cake and serve frozen.
