The Best Baked Sloppy Joe

Sloppy joe sliders are fantastic as an appetizer or a meal. They are quick and easy to prepare, so they can be enjoyed any night of the week! I like to make these on Fridays. After a long week of school and work, they are a filling meal that I can throw together. The kids love them, too! Want the larger sandwich version? Try Rodeo Sloppy Joes or Brown Sugar Bacon Sloppy Joes.

I make these often for potlucks and parties, too. They are an excellent shareable food that I can double and make two pans for a large crowd. I typically make them ahead of time, too. However, I do not assemble the sliders. I find that the sloppy joe sauce makes the rolls soggy. So, I prepare the mixture and store it in an airtight container for up to 24 hours. It still saves so much time and cleanup.

What You’ll Need

I find that all of the ingredients needed for these sloppy joe sliders are inexpensive, which is so important to me when I am feeding my family. Cheap and tasty dinners are the best!

  • Ground Beef
  • Red Bell Pepper: I like to dice the bell peppers but not too finely, so you can still taste them.
  • Green Bell Pepper: I do the same for these as the red bell peppers.
  • Onion: Yellow onion is my go-to and I like to finely dice it before adding.
  • Garlic: Mince fresh cloves or use jarred minced garlic. I do not notice much difference in flavor.
  • BBQ Sauce: Any brand and flavor you like. We highly recommend making our homemade bbq sauce.
  • Chili Powder
  • Brown Sugar
  • Mustard
  • Worcestershire Sauce
  • Cheddar Cheese: I use slices but you can use shredded instead.
  • Hawaiian Rolls
  • Butter: Melted for brushing the top of the rolls.
  • Sesame Seeds: For topping the sliders.
  • Parsley: An optional garnish.

How to Make Sloppy Joe Sliders

Once you make the sloppy joe mixture for these sliders, the rest of the process is extra easy. Altogether, it only takes 30 minutes from start to finish!

  • Preheat your oven to 350 degrees F and grease a 9×13 baking dish. Set it aside.
  • Add ground beef, bell peppers, and onion to a large skillet over medium-high heat. Cook until the meat is browned and veggies are softened. Drain excess grease.
  • Pour in BBQ sauce, add garlic, chili powder, brown sugar, mustard, and Worcestershire sauce.
  • Cook the meat mixture for 10-15 minutes or until slightly thickened.
  • Slice the Hawaiian rolls and place the bottom half into the prepared baking dish. Top with 6 slices of the cheddar cheese.
  • Spoon sloppy joe mix over the rolls and then top with the remaining cheese slices.
  • Place the tops of the Hawaiian rolls on top.
  • Brush the tops with melted butter and sprinkle sesame seeds.
  • Bake for 12-15 minutes or until golden brown and the cheese is melted.
  • Garnish with parsley and serve!

Tips & Tricks

  • Store leftovers in the refrigerator for up to 3-4 days. Reheat in the baking dish covered until warmed through.
  • Switch out the protein with either ground chicken or ground turkey.
  • Want some spice? Add diced jalapenos to the sloppy joe mix.
  • You can use any cheese that melts well. Provolone, mozzarella, pepper jack, and American are all excellent choices.
  • I use a savory BBQ sauce for this recipe since I also add brown sugar. Any hickory, traditional, or even spicy, etc., will be perfect. It just depends on your flavor preference.
