The bartender Ivy Mix’s inspiration for this drink began with an appreciation for Greenflash’s very hoppy West Coast IPA, and a wish to round out its character with softer flavors. A calming, floral chamomile syrup and the mild amaro Cardamaro serve that purpose, while the barrel-aged Spring 44 Old Tom Gin adds structure and a different edge to match that of the beer. The hops and tannins notwithstanding, this is a drink with an appealingly citrusy, floral personality. —Robert Simonson

Ingredients

Yield:1 drink
  • ounces Spring 44 Old Tom Gin
  • ¾ounce fresh lemon juice, plus lemon wheel for garnish
  • ½ounce chamomile syrup (see note)
  • ½ounce Cardamaro
  • 3ounces West Coast Green Flash I.P.A.

Preparation

  1. Step 1

    In a cocktail shaker three-quarters filled with ice, combine all ingredients except the beer and lemon wheel. Shake until chilled, about 30 seconds. Strain into a pilsner glass filled with ice. Top with beer. Stir briefly with a bar spoon to integrate ingredients. Garnish with lemon wheel.

Tip
  • To make chamomile syrup, make a strong chamomile tea, using 2 to 3 tea bags to 1 pint hot water. Let steep for 20 minutes, or until strong. Remove tea bags. Warm 1 cup sugar in ½ cup tea in a saucepan over low heat until dissolved. Cool to room temperature before using. (There will be extra syrup; refrigerate if not using immediately.)

Really LOVED this drink, and we are tough customers, both dieting and therefore extremely selective about our calories. That said, try as we did to find the stated ingredients, we had to make some careful substitutions: Hendricks basic gin instead of Old Tom, and Dolin dry white vermouth instead of the Cardamaro. We knew of Green Flash IPA from a wedding we attended in San Diego (wow) so that's why we tried it in the first place. Sooo glad we followed our instincts.

1/2 and 1/2 brown and white sugar browned butter olive oil instead of neutral oil made 1.5x the frosting and that was a good amount

Unusual and unexpectedly light and floral.

Really excellent drink. Made this first for Mother’s Day and everyone loved it. The IPA gives this an extra dimension that elevates this above any decent drink. Laguinitas IPA is easy to find and I recommend it for this drink. I was not able to get the Cardamaro but the drink came out great.

Fantastic! First time around I made with too little syrup, but second time around it really enhanced the flavor of the IPA

Agreed. I excluded the gin on my first attempt which I imagine reduced the potency considerably, but regardless, the Amaro, Chamomile and sweetness are all welcome counterpoints to the IPA. I used Lagunitas IPA, and the mixture ripens pretty well after about 10 or 15 minutes. Nice summer drinking!
