Ingredients
- 1cup sugar
- 4ounces freshly squeezed grapefruit juice
- 2ounces high-quality vodka
- 1½ounces prosecco
Preparation
- Step 1
Make simple syrup: In a small saucepan, mix the sugar with 1 cup water. Simmer over low heat until sugar dissolves. Set aside to cool, about 5 minutes.
- Step 2
In a large shaker, combine the grapefruit juice, vodka and 1 tablespoon simple syrup. (Remaining syrup can be refrigerated for up to 1 week.) Add ice cubes and shake well. Strain into martini glass, and float (do not mix) prosecco in glass.

Cooking Notes
Instead of simple syrup we usually add elderflower liquor to this.
Refreshing, no doubt. I made 2:1 simple syrup, which is supposed to last longer in the fridge. Use half as much, or the full tablespoon to make it slightly sweeter.
I make a similar cocktail with just grapefruit juice and Absolut grapefruit vodka--no simple syrup. It's delicious without the syrup.
A tasty drink, but who has martini glasses that can hold 7.5 oz? I had to double check that this really was supposed to be just one drink. I will probably cut the juice to 2 oz next time. In general I like a 1:1 juice to vodka ratio anyway.
Rosemary?
I have been making my own version of this drink for many years. My name for it is "Mimosa's Older Sister", because it is similar to a mimosa but way more serious and grown-up. I see no reason for simple syrup. It is delicious without it. Some freshly grated ginger adds a nice note as well.

Lovely. I added 1/2 egg white (shake with other ingredients less Prosecco, no ice, first; then with ice). Added 3/4 oz lemon juice as we only had 2.5 oz grapefruit. Added 1/2 oz crème de cassis in one batch which my partner liked but I preferred without.
Instead of simple syrup, I used a rose liqueur instead. The floral notes with grapefruit will amaze you!
Really delicious. I made enough for 6 cocktails but should have made more. They went down rather quickly
I used 1 tsp. Superfine sugar because I did not feel like making something maple syrup. Very good, not too sweet.

Maybe my martini glasses are small but this recipe for 2 drink made 3 for me. Not really a complaint though. Drink was well balanced and a beautiful color.
I used just storebought grapefruit juice and no additional sugar. This was amazing and STRONG.
Love the drink. Hate the name.
Can't imagine you would need the sugar.
It’s only a tablespoon of simple syrup and grapefruits are quite tart so...
What kind of prosecco are we talking? Should it be spumante, frizzante or tranquillio?
